Kilsby sinkhole...

Saturday 25th January,2020
I got up early and made tried a new recipe for Custard Creams - which did not turn out well at all!  I overcooked them so the butter went very brown and so I tossed them in the bin!  I regrouped and made a batch of Melting Moments which turned out beautifully...

After a simple breakfast, Gus headed in to work and our guests went in to town to look around the shops.  That gave me time to make a large platter of sandwiches which we enjoyed for lunch...

After lunch, I made a 1.5 batch of pizza dough.  It is best left to rise for several hours...
~

We went for a drive to see the Kilsby Sinkhole which is out past Kongorong.  It has crystal clear fresh water and the water is used to irrigate the farm land that it is situated on...

It was a fairly steep climb down a concrete ramp then steep steps then down 2 ladders...

...to get down to the pontoon in the sinkhole...

Gus had booked a tour for us and Jen was our guide, giving us the history of the sinkhole and how it has been used by police and army for dive training over the years...

This is a group of snorklers doing their tour, diving down in the pure clear water...

Denise stayed up top as she's recently had a hip replacement and didn't want to tackle the steps and ladders...

The sinkhole company produces a Sinkhole Gin, small-batched distilled from limestone-filtered water and featuring a range of botanicals including local honey and native muntries foraged from coastal areas close by.  We called in to the Bellum Hotel to sample some Sinkhole gin...

The gin has a nice pink hue and we enjoyed it with cucumber in it.  Then it was time to head home, reading for pizzas under the pergola!
