Southend beach...

 It was hot and horrible in our part of the world yesterday, about 37C with gusty winds, perfect for fires.  We had visitors in the afternoon who left at 6.30pm.  We quickly packed up a barbecue dinner (chicken wings and sausages, bread, sauce) and headed to the beach!

 Brianna and I went straight in for a swim - the cold Southern Ocean refreshingly, tinglingly cold!  It was divine!  We wallowed around for quite a while.  The man set up the barbecue then joined us.

 The sunset just got better and better - a real paint box sky...

We stayed until 9.30pm before packing up and driving home.  We may go back tonight as the weather is no cooler today.

Four Wheel Drive Weekend...

I do apologise for not posting for the past 12 days - we have had a busy time... 
~
On the weekend of the 2nd of February, we had 4 couples come over from Victoria to go 4WD-ing with us.  I made Anzac biscuits and chocolate cupcakes to take for our morning and afternoon tea.
~
~
Unfortunately, the weather was not the best.  After all the hot weather we have had, it decided to be dull and overcast with light showers of rain - not the best beach weather...
~
We battled on, put up shelter and built a beach campfire.  We had to endure eating all this crayfish...
~
and chicken and salads...
~
I made S'mores...
~
The girls played Gin...
~
and we whiled the afternoon away, sitting watching the waves crash in...
~
Then it was time for home....over the dunes ...
~

We saw this cute little Wallaby...
~
We arrived back quite late so had pizzas for dinner.  It was a big day!
~
Sunday morning, it was nice to sit and have a cuppa and one of my cupcakes - they were so moist and chocolately!

Our Aussie Day weekend (Pt 1) ...

 We had a lovely Australia Day long weekend, starting with our visitors arriving on Friday night.
~
 Saturday morning, I decided to make some lamingtons (Wikipedia definition here) ... First I made a butter cake in a slice tin...
~
 They turned out well but they were a bit hard to work with as the cake was so fresh.  I made a runny chocolate icing mix with icing sugar, cocoa and milk...
~
 ~
 It was a messy job but worth it in the end...
~
 Ta dah!
~
 Lunch was Wagyu sausages and beef shasliks with a salad platter and fresh bread...
~
 then we packed up and headed for McIntyre's beach and set up camp in Ruby and a 3 man tent.
~
 We had all the mod-cons!  Ensuite toilet... haha!
~
 Once again, pizza was on the menu.  This is olive oil, potato, garlic, potato, rosemary, bocconcini  and parmesan cheese...
~
 The cooked product - so tasty.
~
 Then I did a few others with the normal toppings...  They just got better and better!

 Gus and Kelvin wanted one last pizza later in the night - this is their sad effort!

 Our camp fire kept us warm, although the wind whipped up so it was quite chilly.

To the beach after a scorcher!

So, in no particular order, because Blogger is being a biatch - here are some pics I took at the beach on Friday night after a scorcher of a day!  We had a day of high north winds and I think it got to 39C, just disgusting.  We got to the beach and had a nice long swim before setting up the pizza kitchen!

The last pizza of the night - by this time we were stuffed so wrapped it up and took it home.
There was a bank of cloud on the horizon and the sun set behind it and created this most beautiful hue.
Second pizza (first was olive oil, garlic, parmesan, potato & rosemary)
This one is half tomato/cheese and onion, bacon, olive & fetta and cheese.
