Week end catch up...


I started off Friday with a nice cup of coffee, my take on a skim latte...
~

Simple scrambled eggs (nothing added) on mixed grain bread plus dairy spread- 7 points
~

Friday night Fakeaway - a delicious Middle Eastern lamb pizza ...
~

...with beetroot hummus...
~

Seriously delicious!
~

~

I was up bright and early to bake these Melting Moments for our Community Hub.
~

I saved 2 to take with us camping...
~

Saturday, we headed away in Ruby and Pearl, to the Lower Glenelg National Park in Victoria.  We took the leftover pizza with us and reheated it on the barbecue. Even better the second day!
~

Dinner Saturday night, Gus marinated chicken thighs then barbecued them.  I made the soba noodles with wilted spinach and a soy dressing...


Sunday morning eggs and bacon...
~

...and toast with jam and marmalade to finish off.
~

Sunday lunch - chicken and lamb kebabs with rice and salad - 4 points
~

A few wines by the pig...
~

...and cheese and crackers.  The weather was really mild, no wind at all.
~

Dinner - steak with a tomato, onion, garlic, mushroom and olive braise and half a baked spud.
~

Bush cuppa...
~

Monday morning quick breakfast...banana and peanut butter on toast...
~

Monday night dinner back home...WW Beef and vegetable Massaman curry with broccolini...another great WW recipe!

    1. Hi Selena, WW stands for Weight Watchers which I have been doing for the past 15 weeks. Lots of great, healthy recipes!

      To make the beetroom hummus -
      In a food processor place
      125g canned beetroot, drained
      2/3 cup canned chickpeas, drained and rinsed
      1 clove of garlic
      1 tbspn tahini
      1 tbspn lemon juice
      2 tbspn water
      Wizz until smooth and combined.

      This was delicious dolloped on the pizza but would be equally delicious as a dip
      with pita chips or crackers.
