Tomato Relish ...


Our local Foodland store had some locally grown tomatoes for sale so I snapped these ones up then went back and bought another 6 kgs to make relish.

I love tomatoes on crackers or toast....love!

Last night I skinned and chopped up 12 lbs tomatoes and food processored 4 kgs of onions. I was a crying mess after that! Last year I didn't even cry, this year I had tears streaming and it took a good two hours for my eyes to settle down...

This is my Mum's stock pot that she used to make her jams and relish in...

Here is the relish - almost done...

Getting it into jars is a messy business!

I followed the 12lb recipe but it is a bit obscure...I boiled it for a good 30 minutes after it had come to the boil for 5 minutes...

This is the South Australian book I used...

26 lovely jars of relish, nice and sweet and spicy!
