We are having coconut prawns for dinner and the dish calls for an accompaniment of mango chutney. I happen to have some frozen mango pieces so ....

Rick Stein had a recipe in his book so I knocked up a batch - just a big jar full. Its gingery, fruity and spicy!

100gms sugar
100mls white vinegar
300gms mango flesh from firm mangos, in 1cm dice
1 small onion diced
2cm of ginger, grated
1 clove garlic, crushed
1 tspn cumin seeds
1/4 tsp Kashmiri chili powder
1/2 tsp salt

Pour sugar and vinegar into a saucepan and dissolve over medium heat.
Add all other ingredients and simmer over low/medium heat, stirring occasionally, for 45 minutes until reduced down to a jammy consistency.

This would also go well with a lamb curry.
