This is a recipe from jamieoliver.com - I saw him make this on his Save with Jamie TV program and thought it looked yummy.

Spread dampened pasta sheets with the mashed roasted squash (I used pumpkin), onion & spinach and crumbled fetta cheese. Roll up and cut unto 4 rounds.

Stand the rounds up and place in a baking dish with the garlic passata sauce. Top with coarsely grated parmesan cheese and bake about 40 minutes ubtil sauce is bubbling and cheese has melted.

Serve immediately with a green salad.

What a great idea! And perfect up here now we are in autumn mode and squash is plentiful. I've made stuffed pasta shells before (you know, those giant shell shaped pasta) with a spinach and ricotta mix, but this seems so much easier. I'll have to try it out on the kids later in the week.
