Australia on toast for breakfast...

I needed to buy more Vegemite yesterday and look what I found! For Australia Day, Kraft changed the name to Australia - a souvenier jar to keep I think!

I made this dish last night and it was delicious - the flavours really become rich. I didn't add any herbs but you could and I didn't even add salt or pepper.

Beef (or lamb) Chasseur

600gms trimmed casserole beef, cubed
3 rashers of bacon, trimmed of fat and diced
1 large onion, diced
300gms mushrooms (I used Portobello)
375mls beef stock
1 can diced tomatoes

In a large pot, brown the meat in 1 tablespoon of oil, remove from pan. Brown off onion, bacon then mushrooms until sweated down. Add the meat back into the pan, then the stock and tomatoes. I put my Le Creuset in the oven and let it simmer for one hour, stirring occasionally then removed lid for further 20 minutes to let the sauce reduce. Watch that it doesn't dry out.
I think this recipe would work for a slow cooker too.

Delicious served with rice and green beans - mashed potatoes would be good too.

We are going out to dinner at The Barn Steak House tonight with 4 couples who are coming over from Melbourne to go 4WDing then we are off to the beach again tomorrow to maybe I will have some more pictures.

  2. No...not a souvenir but the new marketing name for Vegemite. Now produced in USA and renamed. How can they do that to our vegemite?

  3. Have to keep a lookout for that vegemite.
    When the weather cools I will try your casserole. Sometimes in the middle of summer -usually on a stinker of a day I get the yearning for a hearty yummy casserole so I turn the air conditioner on before we eat then we all sit around the table and we don't expire while eating it.

    Takes the crave away & I usually last through till late Autumn or Winter then.

  4. Hello Joolz! Been catching up on your postings and my youngest daughter asked for a juicer for Christmas and was thrilled when her older sister got her one. It came with a book of recipes and she has been trying several so far and loving them. Yes, she also says she is "regular" and does feel better. She does the points for Weight Watchers and is very disciplined with her meals and snacks and exercise (mainly running). Good luck to you. I need to do something as well, my weight is out of control but life here has been hectic since my husband has been in the hospital. Hopefully life will settle down in the next few weeks and I can focus and concentrate on me.
