Another good day yesterday. The quiche was really nice for dinner - it makes a big pie so you may want to cut it down a bit. I didn't have anything naughty so I am well pleased.

Breakfast - same cereal with 5 canned peach slices,
slice of Burgen Soy-lin toast with Flora light marg and vegemite
cup of coffee
freshly squeezed orange juice - it is so good!

Lunch - wholemeal roll with turkey, lettuce, tomato, carrot, cucumber & beetroot & cheese
1 banana
1 Skinny latte - while I'm having my hair coloured.

Dinner - LEMON CHICKEN STIR-FRY WITH HOKKIEN NOODLES
500 gms skinless chicken breast or chicken tenders (I like tenders)
1/2 cup lemon juice
2 tspn finely grated lemon rind
2 tspn salt reduced chicken stock powder
1/4 cup brown sugar
2 tblspn honey
1 tblspn soy sauce
1 tblspn cornflour
1/2 cup of water
stir fry vegetables of your choice - onion, snow peas, bean shoots, fresh corn, carrot, broccolini
twin packet of hokkien noodles

Place noodles in a bowl and cover with boiling water just as stir fry is ready.
Mix sugar, stock powder, lemon rind, lemon juice, honey, soy and water together. Gradually work in the cornflour making sure there are no lumps.
In a wok or fry pan, add tblspn olive oil - fry off chicken and onion intil browned. Add other vegetables and stir-fry until just tender. Add in sauce mixture and stir through until it thickens.
Drain hokkien noodles and add to wok - toss through and serve immediately.

Snacks: 10 dried apricots, 4 cruskits with vegemite. Need to drink more water!
