Okay, these are really yummy and just a bit naughty at the same time.

Place your spuds on a tray lined with baking paper and bake for approx. 1 hour until nice and soft. Cut in halves (as above) and scoop out centres and place in a bowl.

Dice 1 rasher of bacon and slice up 4 spring onions - micro for 2 minutes then add to mash potato mix. Add 1/4 cup sour cream and 1/4 cup grated cheddar cheese. Season with salt & pepper.*

Spoon this mixture back into the hollow potato shells, top with a little extra grated cheese and sprinkle with paprika.

Bake a further 15-20 minutes until cheese is melted. Enjoy with a good steak or chops and salad. Oh, they are good! Of course you could play around with the innards and do what ever flavour you like. Tex/Mex or Italiano would be good too!

as much as I so dislike cooking this does seem easy! My huhoney would think that I was the most amazing women if I pampered him with this dish...ok...I am going to do it! I will let you know...
