Green & Gold Jubilee Cake...

This is much more like the Jubilee cake I remember my mum making - it's a firm cake with lots of fruit (I used some mixed fruit, raisins and glace cherries). It's not as sweet at the other one I made (a lot less sugar) but is still very yummy. The thin icing adds just enough sweetness.

  5. I'll have to try this one as DH says my boiled fruit cake is too heavy for him....hasn't stopped him eating it for the last 14 years though!
