Pizzas in the Weber BabyQ ...



I found this video which explains perfectly how to cook pizzas in the Weber BabyQ with a pizza stone.

Down at the beach, I was in charge of cooking.  I had chopped up all the ingredients so it was a matter of rolling the dough, assembling and placing on the pizza tray and stone.

Cooking times were a bit longer due to the elements (strong southerly winds) so each pizza took at least 35 minutes.  It was a progressive dinner for the four of us!
~
I made a double batch of pizza dough just before we left at 2.30pm.  I put it in this plastic container and it happily rose while we made our way to the beach.  It was perfect when I started cooking, hours later.

Another Supreme - by this time, I had the timing down pat and the crust was super crunchy.  This was the last one for the evening, we were feeling quite stuffed!

Banana Choc Chip Muffins ...

It's amazing how something so gross as a brown, squishy over-ripe banana that is way past eating can be used to make something so delicious as these muffins!  They'll be nice with a cuppa tonight.
~
I used this easy recipe found HERE.  It makes 12 big muffins or probably 15 smaller ones.
~
We are off to our favourite beach spot and we are camping glamping in Ruby. We plan to have pizzas cooked in our Weber BabyQ - Gus bought a pizza stone to fit in it.  I'll let you know if it works or not.
~
We plan to make:
 Prawn, red onion, chilli and tomato
Barbecue chicken, spinach and bocconcini cheese
Supreme with the works - bacon, salami, mozarella, anchovies,
 olives, onion, mushroom, capsicum, tomato and cheese
Margherita - tomato, basil and cheese
~
 I hope the weather fines up a bit, because it's overcast at the moment.

Delicious Moussaka ...

After our Weight Watchers meeting last night, we had our committee meeting and two of the committee supplied dinner - a zucchini slice with tossed green salad and a Moussaka by Annette Sym.  I hadn't tried this recipe but I will shortly, it was delicious!

I had yesterday off work to take my Mum shopping at our regional centre (with my big sister) but it's back to work today!

Carrot, Zucchini & Pineapple cake (Weight Watchers) ...

 We had our first birthday at our local SA Weight Watchers Inc. club and our president brought along this divine cake.  I assembled all the ingredients and you can find the recipe for it HERE

 The batter would also make lovely muffins, I think...

 The frosting is a little runny because I used spreadable cream cheese instead of the block type but it tastes the same ...
~
 It's a lovely, moist cake.
~
Hard to believe it's a Weight Watchers recipe.

This little piggy...

 ... helped me save $177.65!  I have been putting any spare $2 and $1 and .50 cent coins in the pig for several months and today, curiosity got the better of me.
~
 Once I had it counted up, I went on the scrounge for other coinage (I have another pot with 20c 10c and 5c pieces too) and I soon had the total up to a neat $200.  This will be paid off my credit card tomorrow - Yay!
~
 In other rivetting news, I spent over one hour yesterday, relaxing with my feet in my foot massage spa (with some delicious lavender bath crystals)...
~
I have had bad foot pain, especially in my right foot, since Friday when I wore the wrong type of shoes to work.  I have been having trouble with the muscles and bones in my feet recently and this has aggrivated the situation.  It feels like a migraine (nagging, throbbing pain) across the ball of my foot and the muscles leading to my heel.
~
When I went to bed last night, I rubbed lots of ice gel into my foot and put on a sock.  I took 2 Panadol Osteo and tossed and turned for a while until I got the foot comfortable then drifted off to sleep.  I woke this morning and thought ... no ache or pain!  So far so good today, so will do the same today with another foot spa then repeat the ice gel and Panadol tonight.

I had a ladies night out with friends last night which was so nice.  We must be getting old - one glass of wine with our dinner then onto a movie (which was just revolting - Bachelorette - don't waste your money!) and  coffee and cake afterwards and home by 11.30pm (we had to travel 100 kms round trip to the cinema).
~
Just pottering here today, drinking tea, fiddling on my iPad, knitting, 
Gus is mowing the lawns before it gets too hot (30C) and he has dinner taken care off (I spied proscuitto, chicken, fresh asparagus and pecorino cheese in the fridge).
~

Postcards from Tasmania ..Strahan to Hobart

 We left Strahan in drizzling rain but that was okay as we had a few miles to travel.

 Coming into Queenstown...a copper mining town.

 We travelled through rainforests...

 ... then across snow country...

 Look out for kangaroos!

 Getting close to Hobart - beautiful grazing country...

 Arriving in Hobart ... what should be do first?  Check in to the hotel or ...
 ... go to the Cadbury chocolate factory!  No contest!

 The next morning, we went to the Salamanca markets...  we split up and browsed the stalls at leisure...
~
 Lots of wood craft featuring Huon pine and other fragrant woods...
~
 ~
 Delicious honeys (Leatherwood became a favourite of mine) ...
~
I bought this cute little hand crafted Tasmanian Devil and map of Tasmania.
