Cruising along...

Monday 26/2/17 - I made this delicious turkey salad plate with an apple on there too.  This worked out to be 5 smart points with the turkey and cheese...

Dinner was a success.  It called for frozen stir-fry veggies but I chose to buy fresh - I shop daily anyway.  The corn came from my freezer...

Before I got dinner under way, I put together this oat and chia seed overnight pudding, ready for breakfast...

I smashed my 10,000 step goal easily...

Back to dinner...Green curry chicken with coconut noodles - this was delicious!  It doesn’t look real saucy but it’s in under there...7 sp

I plated this portion up for my lunch on Tuesday...

We had dessert of fruit salad and shared a 100gm tub of yoghurt... 3sp
~

The mornings are getting cooler...

The porridge pudding had soaked overnight and was yummy but I’m sad to say, the points were high.  Both the oats (1/4 cup) and chia seeds (1 tbs) were 3sp each plus skim milk so this came out at 7 points.
~
Again, above my step goal!  I have also been hitting my 2 litres of water goal too but man, I am going to the loo frequently! 
~
Dinner was a grilled pork chop, trimmed of fat, drizzled with a sauce of wholegrain mustard, maple syrup and orange juice and rind.  I served it with a baked spud, I had 1/2, fresh green beans, carrots and baked pumpkin and apple. I scored this 7 points.  That pretty much cut out my daily points along with a few snacks of salsa and carrot (1sp and yummy!) and a banana and a date bliss ball.

Out and about again this morning...

I made this, I guess you call it a frittata, in my new little pan.  Two eggs, 2 cherry toms, 1 mushroom, brocollini, leftover carrot, onion.  I sprayed pan with oul, fried off the veggies then added the eggs and just let it cook without scrambling.  I topped with about 20gms grated cheese and sprinkled with oregano...

Can I tell you how good this was?  Soooo goood! With the little bit of salsa, it was delicious!  2 points for the cheese and 1 point for spray oil so a 3 point breakfast! 
~
This is the little pan I bought.  It is Baccarat brand and it had 70% off so I got it for $19.95.  It is only the size of a side plate and my small saucepan lid fits it perfectly.  Great for scrambling 2 eggs or knocking up a little frittata.
~

Week one down...

Good morning! After a chilly start to this morning, we’re in for a lovely 27C.  Monday’s are my weigh in days...
~
A bit of what I ate over the weekend...I stuck to healthy snacks and fruit between meals.  Pears are lovely at the moment, grapes too.  Gus cooked chops on the barby and made a potato and sweet potato bake which was done in chicken stock so no fat included. Tasty!
~
I was very naughty and had way too much wine on Saturday night - I paid for it all day Sunday.  Gus cooked these delicious ribs in his smoker...
~
My Vegepod is full and overflowing!  I pulled out the peas at the back as they were being squashed and overshadowed by the cucumbers and I may even pull out two cukes too. They’re just too overpowering! I hVe a strawberry flower at last! The tomato is at the top of the pod so not sure what to do there!?
~

Here are those ribs. He’s in the learning stage.  They were tasty but I think over done as far as tenderness and juicyness go.  They look burnt but thats just the marinade and 6 hours of smoking in hickory.  Still yummy!

Snack prep for this morning - 75gms salsa is 1 smart point and the carrot is zero...
~
To be prepared is the key!  I just need to keep telling myself that.

Sardines in springwater are zero points...
~
Bread is obviously a big point item, two slices are 5 points then add a point each for the sauces for a total of 7.  That is a big breakfast that will take me through to lunch with no problem.  I won’t have toast every morning.  Two egg ommelette with veggies is a zero point breakfast.

I walked 3 km this morning and really enjoyed it.

(Backup) Off camping and WW update...

We are heading off for the day in Ruby and Pearl.  We’ll probably camp at McIntyre Beach if our spot is free.

Well, I’ve been testing out some recipes and I’m impressed!  Gus was away Wednesday night also so I made this yummy chicken & coconut curry soup.  I think it took half an hour from chopping to being ready to eat. It made enough for 6 so I’ve frozen the other portions.
~

A great, sweet snack - thinly sliced apple.  
~
I walked again on Wednesday, another 2.9km in 30 minutes.  This tree was felled in a new park that is being developed in our tow.  They have put soft fall bark around it so kids can climb on it on their way to and from the nearby primary school.  
~
I made these Date Bliss balls...oh so yummy!
~

They have organic cacao in them so you get a nice guilt free chocolate hit...these will be snacks for the next fortnight...it made 36 balls!
~

Some are in the fridge and the others in bags in the freezer, ready to grab.
~
This was a Zero Smart Points lunch - huge! I’ll scale it back a bit next time.  
~
I tried this new yoghurt but didn’t like it. It’s sweetened with Stevia but I don’t like the taste or texture.
~

Gus got home Thursday night and he picked up fresh salmon in MtG on the way home.  I found a WW recipe for grilled fish with mango salsa - this was Zero SP but I did add a teaspoon of caster sugar to balance the lime juice...
~

The salad was a bit sad but overall, all delicious!  Salmon is zero points also!
~
Brekky -  2 scrambled eggs, no added butter (zero points).   Two slices Burgen soy-lin toast, 2 teaspoons light butter spread. 6 points.
~
I went to my AquaMobility class on Friday morning.  It was great! I took one date ball and a bana for snacks and drank plenty of water.  When I got home, I made this yummo turkey wrap with Mountain bread...6 points...
So good!

It was such a muggy, steamy day.  I got home from work and just sat and had this little bottle of Kombucha.  This is only 1 Smart Point so is a good choice if you want a bit of fizz and flavour...
~

Dinner - WW Friday Night Pizza!  I didn’t read the recipe quite enough (I was meant to char grill the zucchini and pumpkin but zapped it instead to soften it.  Still good with capsicum, mushroom, tomato, lean salami and bacon and a sprinkle of cheese.  
~
I made two but Gus and I shared one so there is pizza for lunch today too!  I did have two glasses of Pinot Noir which I counted also.
~
Seriously yummy!  I also had a fresh pear, sliced up, for dessert.
~
This morning, I’ve put these leftover veggies in a container and they’ll get tossed into our ommelette tomorrow morning.
~
~
This is a WW Banana and Bluberry bread - I’ll slice this up and freeze portions for snacks for the coming week.
~


So there you are, I’m in the zone and will try really hard to keep at it.  I plan a good beach walk this afternoon and tomorrow morning which should give me a good cardio workout!
