Busy days but not much happening here...

Apart from going to work each day, life is a little mundane at the moment.
We had this sauso pasta on Wednesday which is an easy dish...and that is our homemade spaghetti in there!


I also made Chadd's bread rolls - just the best!

Thursday night we had Gus's mum out for dinner for her 75th birthday.  I did Thai Green Chicken Curry and flat breads by Julie Goodwin.  We had delicious apple and rhubarb crumble to finish.

Friday night I was looking for something easy to have so I made a pot of pumpkin and veg soup - pumpkin, zucchini, onion, carrot, celery, potato, chicken stock powder and water.  Boil until veggies are tender then blitz with a Bamix or stab blender.  Delicious with a dollop of sour cream on top!

To go with the soup, I made English muffin toasties - I mixed some of my tomato relish with an egg, some cooked bacon pieces and some cheddar cheese.  Spread this mix on top of the split muffins and bake in the oven until bubbling and browned.

Saturday I had to zip to MtG to buy Gus's mum her present (on behalf of Gus).  This was after I'd taken our cat, Bonnie to the vet.  She seems to have an ear infection and is quite poorly with it.  She hasn't been grooming herself as her neck seems to be stiff and she is very slow off the mark.  I would hope by tomorrow she is looking a bit better or I will take her back.  I have drops to put in her ear each morning and night.

Then it was off on a jaunt into Victoria to deliver a vehicle with Gus.  That took up the remainder of Saturday...

After getting home from MtG, picking up Bonnie from the vet and before heading to Casterton, I squeezed in making some biscuits and a date fruit loaf for my sister and bro-in-law who are heading off on a 4 month caravan trip.

No rest for the wicked!

Gus knocked up dinner which was delicious...

Crumpets!  For as long as I can remember, Golden crumpets have been packaged like this.  They have never changed!

I was out of bread Sunday morning so I had my scrambled eggs with crumpets.

We went out for lunch to Fodder in Coonawarra for a family lunch for Gus's mum and do you know, I totally forgot to take even one picture! Unheard of for me but it was such a nice lunch, we didn't really have our cameras out much.
~
It was a big day and I was in bed as soon as MasterChef had finished.

I'm looking forward to a quiet weekend coming up as we have nothing on so I can just potter and do not much at all!  :)

  1. You always you always do such wonderful baking. I especially love the photo of scrambled eggs with tomato sauce, I thought was the only person who liked this as others seem to look strangely at me for having this combination.

    1. I think tomato sauce is for putting on exactly what you want! I like it on roast lamb too but some people think that is outrageous! Lol!
