Another batch of sour dough....(updated)..

...for a loaf and some dinner rolls.

The starter was producing little bubbles after it's earlier feed (now 2.35pm)...

I should have prepared the dough last night so it could proof overnight but, hey, Friday night relaxing got in the way!

This morning, I mixed the dough in my stand mixer...

300gms of bubbly starter
1 kg bakers flour
430gms water
50gms oil
15gms salt (less if you like)

It makes a big dough ball...which I have halved...

I'll make a loaf with one and dinner rolls with the other.  I just hate buying rolls now so I just freeze these in bags and pull them out as needed.  So much better than store bought with no nasties!
I have covered both bowls and hopefully by 5pm, the dough will be ready to shape and have it's second rise before baking...

We are in clean-up/purge/chuck out mode here today! Things have got out of hand in our garage and its got stuff that needs to go to the refuse centre.  I'm going to be ruthless!

Added: the results of this bake...

This is the smaller bowl which rose right to the top (it looks deflated because the gladwrap stuck as I took it off)...

I shaped the loaf then made rolls.  They had a second rise of 1 hour...

Popped into a very hot oven, these took 25 minutes...

the result, a very fine crumb...

...but so delicious!

Gus did lamb kebabs on the barby for dinner.

I achieved quite a bit today - tidied my pantry and only tossed out 2 shopping bags full of items, out of date or stale, part used jars of stuff. Last time I cleaned the pantry, I hauled out a big black garbag!
~
Both cupboards in the girls bedrooms had a purge, tossing more bits and pieces.  I was ruthless! It feels good!

  1. Joolz, a thread has been started on the Down to Earth forums about making sourdough bread and I thought of yours and about how successful you have been and I have been tempted to start the process. Still procrastinating though ;-)

  2. Today I followed your lead and baked the sourdough loaf that I started yesterday from figjamandlimecordial blog instructions. For three years I've been persevering to make the perfect loaf and today, thanks to your introduction to Celia's blog, I achieved that goal. I'm so grateful that we linked up with blogging and so glad I finally found the easiest and clearest instructions for perfect sourdough. Best I've EVER tasted! Even better than the expert baker's loaves. Thanks Joolz, I'm forever grateful to you for your inspiring sourdough blogs. To be honest, I had given up but when I saw your perfect loaves I had to give it one more shot. So glad I did. :)

    1. Sally, thank you so much! I'm so pleased you have had success. Celia certainly knows her sourdough (not to mention all the other good stuff she has on her blog). I now need to read up on the different hydration levels needed to achieve a holier crumb. Its all good fun and really, as long as the loaf rises, it doesnt matter what it looks like. My little bread rolls are delicious! Here's to some ripper SAd loaves, happy baking!

    I love all your lovely sourdough pics. I still have mine sitting in the fridge waiting for my attention. You probably have already said in a previous post, but where did you purchase the starter from Joolz? I made my own but it didn't look as good as yours :)

    1. Well, Tania - get that starter out and give it a feed! If, after two feeds you have some action, you are good to go! It is time consuming (not like a 3 hour turn around for a yeasted loaf) but it is so good!
      Celia from figjamandlimecordial.com gifted me some dry starter which I rehydrated and bought to life. I'm sure if you emailed her, she'd be happy to send you some of her Priscilla starter. Have a go! :)
