Salmon fish cakes...

I gave these fish cakes a whirl last night...(Web pic)

I used tinned salmon and some roasted salmon for texture...

Flaked salmon...

Mashed potatoes, peas, chives, egg, lemon zest all mixed together...

Patties formed...

Pan fried in olive oil and then I baked them in the oven for about 10 minutes...

Served with a tossed salad - with mandarin orange added for citrus zing...

Something different if you're sick of meat and 3 veg!

  2. I planned on making these tonight. I bought cans of salmon awhile back to have on hand. I started pulling out ingredients. Checked pantry, no salmon. I did have cans of chicken breast, so we ended up having chicken spaghetti instead. And I made enough so I have another casserole to put in the freezer for another meal, and Carey has leftovers to take to work. I'll have to put salmon on my shopping list. :)

  3. I just this minute remembered that my daughter came and 'borrowed' salmon several weeks ago! Whew, I'm not losing it after all! We live closer to each other than we do to the grocery store, so we are each others' go to pantry call. :)
