Minestrone soup...

 

We went back to Autumn yesterday. A beautiful clear sky, sunny day with barely any chill in the air. Still, I was wondering what I could knock up for dinner to warm us...

I diced a medium carrot, an onion, stick of celery, a small potato (all chunky)and a rasher of bacon then sauteed that all off in 1 tblspn olive oil. Then I added 4-5 cups water, 3 teaspoons chicken stock powder, a can of tomatoes and about 3/4 cup of this Italian soup mix. Season with salt and pepper towards then end. Gently simmer for two hours until the soup mix is tender. With half an hour to go, toss in a handful of macaroni or spiral pasta...
I made rat bait and also bread rolls so it was a yummy Friday night meal...

  1. Oh thanks, Joolz! I was wondering what to do with the dregs of an Italian soup mix pack. Now I've knocked your soup together & put it in my slow cooker to provide a warming winter meal tonight when our gardening is finished. Winter & soup are a perfect match, I think :-)

    1. It is a good recipe for the slow cooker as its gentle on the vegetables and the beans and lentils get a long, slow cook. I hope you enjoyed it after your gardening! :)

  2. I haven't had minestrone for weeks and there's some veges that will be looking sad soon in the crisper! I must try the rat bait but I'll need to buy some more bacon or ham :).

    1. Sad, tired veggies are great for soup. Rat bait really made it a meal. If you dont have chutney, I just use tomato and worcestershire sauce...

  3. Last night I made Crockpot Swedish Meatballs w/ Noodles. Went to the effort of typing up a post for my recipe blog, and then completely forgot to take a photo of finished dish! :(

    1. I made that same mistake yesterday. Had a lovely barbecue lunch with friends and only took pics of my salad, not the great steak Gus cooked and the other yummy salads that the guests brought over. Der!

  4. Thanks Joolz for the Minestrone recipe, I had never made it before, but did last night, it was delicious, so was the Mango Chicken that I also made. Love your blog.
