Maz's Economical Pudding...

Maz's Economical Pudding


1 1/2 cups SR flour

1/2 cup milk (may need a bit more)

1/2 cup currants

~ Mix flour, milk and currants together in a bowl then transfer to a big casserole dish...

Put the following in a jug and stir until butter has melted...

2 big tbspn golden syrup

2 tb butter

1 1/2 cups boiling water

Pour over batter mixture and bake uncovered for 1 hour at 175C

Serve with cream...

My big sister Maz, used to make this when I stayed with her family while my Mum and Dad were off caravanning, when I was about 16 years old. Fond memories!

A simple little pudding, best eaten straight out of the oven!

A lamb chop curry for dinner last night, to warm us!

I try not to use packet mixes, but this is a good one and produces a lovely mild curry. With this one you add a banana, apple and sultanas so its sweet and fruity. I had everything in the pot in about 5 minutes then 1.5 - 2 hours later, its ready.

  2. I have a very similar recipe but it uses a sliced Apple instead, Apple and sultana would be really nice
