Beef Vindaloo...

Oh, I am over BlogGo now - I attempted 2 posts over the weekend but both disappeared into the ethers! Here's a quickie...

This gravy beef or shin of beef...great for slow cooking an Indian curry...
 
I marinated the beef in spices for nearly 24 hours...

The vindaloo os nearly ready...

I made naan breas and a Kashmiri Pulao rice dish with spices, sultanas, cranberries and cashews...and a green chilli, mint yoghurt sauce...
~


It hit the spot nicely!

Thai Beef Salad...


Assemble a salad of fresh lettuce leaves, tomato, snow peas, bean sprouts, red onion, fried shallot...
 

...chopped mint and coriander...
 

A dressing of soy sauce, sweet chilli sauce, lime juice, a little sugar and sesame oil...add a piece of your favourite grilled steak - Friday night dinner!

Not happy!

I sat and reconstructed the blog I did on Blogsy, on BlogGo this morning.  Had it nearly ready to publish, swapped to Safari to get a link for one of the recipes and ... Bazinga! It disappeared!

I am determined to post our goings on from last weekend but it might be this coming weekend before I do! Ugh!

Yesterday, I made Rhonda Jean's scones to take to work for smoko.  This was for Gus's birthday cake - if its your birthday, you bring a cake or something for smoko!

Not bad, but I think I have issues with my fan forced oven heating evenly. I need to investigate heat settings more...

Blogsy is not letting me post pictures due to a space issue with Picasa. As soon as I figure it out, I'll be back (or I might try posting using BloGo if I have time).  We had a lovely weekend home with our girls for Gus' birthday.   Its a busy week at work as its End Of Financial Year time...ugh!  Trying to keep warm it was 10C here yesterday - even I felt the cold!

Photos on my phone...

We've had a busy weekend, these are a few pics from last week before I launch into the weekend...

I enjoy curried eggs on toast. Just hard boil two eggs, mask with a fork then add your favourite mayo, curry powder and salt and pepps...

Stir to combine...

...then smash it onto your toast.

I've been gaving a few Cup a Soups at work when I feel hungry...

Can you tell I am very protective of my stationery supplies? I label everything so no one steals them!

Bri made me a little owl (she has a long list of orders) - I have called her Olivia.

I dropped off a banana bread to my niece who little boy Jaga, has been a bit sick. Nothing worse than being homebound with a sick baby in cold weather...

My girlies arrived home Friday. While I was making a curry, they sat colouing in...

I love making this little pickle salad to go with the curry...

I cheated and bought the naan and roti bread from our local Indian restaurant.

I'll be back with more from the weekend - we celebrated Gus' birthday...

Sauso pasta...

This is a crazy, easy dinner...

Babymac's Sausage Pasta

I don't even do all that fancy stuff in the pan that Beth does! I just bought tasty sausages, peeled off their skins, chopped them into bite sized pieces, gave them a roll and threw them in a pan. Fry off those meat balls until browned then drain the meatballs on kitchen paper and wipe out the pan. A lot of fat comes out of sausages!

Choose a nice pasta sauce. I have several favouries but this one is good. Five Brothers do good sauces too!

Ten minutes in and these babies are simmering away, just waiting for the MOTH to get home (sigh, late again!). I like to add some torn basil leaves and a crack of pepper...

What I like most is that these are all the dishes that it takes to prepare this dinner!

When you are ready to go, add in your al dente pasta of choice and toss through...

Sprinkle with a little parmesan and there you have it! This is dinner in 30 minutes or less! Get in my belly!

Knitter natter...

(Day 18)
I am thoroughly enjoying my knitting...
After a slow start and a few glitches and unpicking, I have settled into the pattern and its going well.
I have even learned (via a YouTube video) how to pick up dropped stitches (that happened this morning and I really panicked but I got out my trusty crochet hook and voila, picked them up! Yay!)...
...and also to draw yarn up the side of your work when doing stripes so you aren't joining colours all the time. Old dog, new tricks!

Big barbecue lunch...

We had planned to have a back yard paddock fire on Sunday but the weather got in the way of things. Cold and drizzly, we abandoned that idea for a pergola/indoor affair....
You see, we had this huge lump of cow to cremate! I believe it was about 7 kgs (Gus bought it at a fundraising auction a few weeks back). It was cryo-vacced but was needing to be eaten. We invited some friends around and lit the chiminea to warm us...
I made some ciabatta rolls (starting the biga (mother) the night before...
I must add a bit more water next time as it was quite dry...
When I added the rest of the flour and yeast etc the dough seemed very dry so again, more water needed next time. I didn't think they would be any good, the dough was so tough to work with...
...but they turned out okay. Perhaps not as airy and coarse crumbed as they should be but totally edible anyway.
Oh, wow! This is my new, favourite salad! So delicious and tangy!

The dressing is so scrummy - you must try it! I would halve the dressing recipe as it makes enough for 2 salads and I'm not sure how long it keeps in the fridge...
I totally forgot to take pictures of the big lumps of rump steak that Gus cooked but we all enjoyed it, from the warmth of our dining room. A great day with friends. We don't do it often enough!
