Tomato zucchini bake...


Do you get sick of carrots, peas and beans as your veggies? 


Try this nice winter warmer - chop up zucchini, onion and celery...

Add a can if chopped tomatoes (use the one with Italian herbs added if you like), season with salt and pepper and sprinkle in your favourite herbs - basil, thyme, parsley or mixed herbs. Use fresh ones if you have them!! Give it all a good stir to combine.

Butter 2 slices of bread, stale bread Is fine. Chop it into cubes and sprinkle onto the tomato mix.
~
Top with a little grated parmesan and  cheddar cheese...
~
Bake for about 45 minutes at 180c until the top is golden and veggies are tender.
We had ours with lamb chops, mashed potato and pumpkin and peas.

  1. Looks delicious! That time of year has arrived when we can enjoy making the hearty casseroles and soups again...just put a Sheherd's Pie in the oven!
