The Graduate and Peppermint Rocky Road ...

The girls are home for the long weekend so we had a few champers last night.

Brianna was advised of her graduate year placement this week so she is thrilled to have a job next year - paid work! She went to three interviews with hospitals in Adelaide but got her first preference at Lyell McEwin Hospital!

We are so very proud of you, Nurse Brianna!

 

Bri had requested I make this Rocky Road recipe...

It will not form part of my diet - thankfully, I am not a chocoholic!

Assemble the ingredients...

Chop the Mint Slice biscuits up ...

Chop up the Peppermint Crisps ...

Melt the milk chocolate - I used 1 and 1/2 bars of chocolate...

Tip in the biscuits ...

Tip in the PCrisps and the bag of marshmallows ... Stir it through quickly ...

Press into a lined slice tin ... Refrigerate for an hour ...

Chop roughly and enjoy!

US friends, I'm not sure if you have those biscuits and candy bars - any choc mint biscuit would work and same with the peppermint chocolate bar.

  1. Yummo. Love peppermint and chocolate. Will be trying this one for sure. Just once! I had some Rocky Road recently with lolly bananas in it and that was really nice too. You must be very proud of your girls.

  4. A big congratulations to Brianna! It is such an achievement to be able to get a placement and especially one that you really want. Well done. I am glad you said that the Rocky Road isn't really part of your diet. LOL! I got a sugar hit just looking at the photos :-)

  6. Congrats to your daughter :) This rocky road looks delicious, I'm a big fan of the peppermint slice biscuits, lol. I always look out for the peppermint crisp bars when I'm in Aussie, they're not easy to find here in NZ. Have a good week!
