In the kitchen...

I've been busy in the kitchen since we got home....
~
Juicing each morning, so good!

Enjoying cups of tea in my new teacup and saucer (Spode)...

Turning dried apricots into ...
~
... this golden, sweet goodness!

And these 6 punnets of strawberries that only cost me $10 (1.3kg when hulled) were turned into ...
~
~
6 jars of luscious strawberry jam!
~
We are having coconut prawns for dinner and the dish calls for an accompaniment of mango chutney.   I happen to have some frozen mango pieces so ....
~
Rick Stein had a recipe in his book so I knocked up a batch - just a big jar full. Its gingery, fruity and spicy!
~
100gms sugar
100mls white vinegar
300gms mango flesh from firm mangos, in 1cm dice
1 small onion diced
2cm of ginger, grated
1 clove garlic, crushed
1 tspn cumin seeds
1/4 tsp Kashmiri chili powder
1/2 tsp salt
~~
Pour sugar and vinegar into a saucepan and dissolve over medium heat.
Add all other ingredients and simmer over low/medium heat, stirring occasionally, for 45 minutes until reduced down to a jammy consistency.
~
This would also go well with a lamb curry.
~
I also made this yummy barbecue sauce...
~
Naughty lunch watching the AFL Grand Final!
~
Later, I'm making Parathas (like flaky chapatis) to go with the prawns Gus will cook. Phew!
~
Cheers, Joolz xx
