Banana and prune muffins ...

This recipe is for a basic muffin mix - add whatever flavour you like. I had some bananas in the freezer and added chopped prunes too...

Basic Muffin Mix

2 cups SR flour

1/2 cup sugar

1 egg, beaten

1/4 cup oil (I used vegetable oil)

1 cup of milk

Flavourings of your choice - blueberries, raspberries & white choc, choc chips, cranberries, date and walnut, the list in endless...

Place flour and sugar in a bowl, mix to combine. Measure out milk into a jug, add egg and whisk then add in oil. Add to dry ingredients and mix until just combined. Add in your flavour choice. Never overwork a muffin mix as it makes them tough.

Dollop into muffin cases and bake for approx. 20 minutes at 180C until golden.

I freeze mine in a plastic container. Hubby takes one to work, wrapped in plastic then microwaves it warm at smoko time.
