Sticky Rice Cooking School...

For Christmas, our girls bought Angus and I a voucher to attend Sticky Rice cooking school. We had several cuisines we could choose from. We chose Sri Lankan and South Indian...

We arrived and were welcomed in and served tea and coffee. We met the other 8 participants. This was a small class of ten instead of the usual 18 so it wasn't so squashy. We began at 9.30 am.

Our chef was Brian who had travelled throughout Asia was a fountain of knowledge. We learned how to crack a coconut, take out the flesh then process it to obtain coconut cream and milk.

All of the ingredients were laid out and measured for us...

we each had a work station and a job to do to get the dishes on and cooking.

There's Gus, stirring his Seeni Sambal (like a sweet onion chutney).

This is my Ambul Thiyal - fish curry. Here, I am frying off the soice paste and onions to intensify the flavours. Its going to be hot and sour.

Ten people was a good number to have, we each had room at the stoves to do our dishes...

Brian showed us how to make egg hoppers. A coconut milk batter is swirled around the hot pan...

Then an egg is cracked in and the lid put on the pot...

Now, topped with chicken curry (Matara style)... This was our entree which we enjoyed with a glass of wine. Then it was back into the kitchen to complete the main courses.

This is my fish curry, although it doesnt look too appetising, it was very tasty.

These are beef skewers with jaggery and tamarind, very tender and flavoursome...

Here we are eating our dessrt - wataluppam - a sweet coconut milk baked, spiced custard made with jaggery which is an unrefined sugar made from palm sap. Ours had cashews in the bottom too.

These were made and steamed in the oven when we first arrived at Sticky Rice as they had to cook then cool so we could have them at the end of our meal.

Delicious, like a spiced, coconut creme caramel.

We had a ball - this was a thoughtful gift that our girls gave us - it was right up our alley! There are lots of other cuisines to choose from so we will no doubt do it again one day. We highly recommend it!
