Strawberry Jam ...

Hahndorf in the Adelaide Hills is renowned for its strawberry growing.  Although late in the season, there seemed to be an abundance of them when we came through on Tuesday, on our way home.  I purchased 3 large punnets for $10 (usually one small punnet in our home town is about $4 so it was a bargain). The strawberries are grown here.

I used a recipe from Matthew Evans (Gourmet Farmer) here - when I weighed the berries, I had exactly 1kg so I just had to add 1 kg of sugar.  I also added the juice of one lemon.
Do you like my jam funnel?  It's just a 2 litre plastic milk carton top, cut off.  Perfect for fitting jars and wide enough to take a cup full of hot jam at a time.
~
I let it simmer away for a bit longer than the recipe, try to achieve a jam that would set well.  It is still a bit runny.  :(

The result was 6 lovely jars of home made jam.  Very happy with that.

Another yummy thing that they have at Beerenberg is choc coated freeze dried strawberries...

So goood!

  2. That jam looks fabulous and I am loving the funnel. I need to do some more cooking. It has been so flat out recently I feel I have been struggling to just get three meals a day on the table!
