Since I last posted ...

Where does the time go? I've been trying all week to get a post done but life just seemed to get in the way.

We spent last Sunday evening at the beach....
~
... enjoying delicious marinated prawns on the barby ...
~
... and yummy rump steak with salad ....
~
Watched the sun go down after a very hot day ...
~
 I got home from work one afternoon this week to discover this flock of Ibis in my back yard...
~
 It is probably the closest I will ever get to having anything 'black faced' in my paddock, hey Tracy?  I long to have a few suffolk sheep. (I hope you don't mind, I borrowed your photo, Tracy).

I made this delicious Thai beef salad (from that Weight Watchers Programme book I posted about) ...
It was very similar to this one I had in Sydney, so fresh and delicious!

I must have been half asleep one morning as I forgot to put the hopper on the side of the juicer to catch the pulp... I had carrot pulp sprayed everywhere.. seriously - everywhere!  Not good!

Dinner on Thursday night was my own recipe.  I had been given about 1.5 kgs of homegrown tomatoes which were quite ripe so I skinned them then put them in my big blue dutch oven and cooked them off with some onion, garlic, fresh basil and seasoned with salt and pepper.  I also added a tablespoon of sugar and some balsamic vinegar. I let it simmer for about 2 hours all up. Once cooked, I halved the sauce and froze one portion for another time (love this!).    I had bought some Lamb and Rosemary sausages from Woolworths so I cooked them in a fry pan and got some fusili spiral pasta on the boil.  When the sausages were cooked I cut them into pieces.  I fried off some mushroom slices too.  To put the dish together, I threw the sausages, mushrooms and pasta into the sauce, served it and topped it with grated parmesan.  I must say the sausages were delicious and much easier than doing meatballs.  Altogether a yummo dinner!

I am a free agent this weekend, no children or husband to answer to and I am going on a 'girls night out'! Woohoo!

  1. Hope you enjoy your weekend and night out with the girls Joolz. The ibis aren't quite the same as the suffolk sheep but I guess they will have to do until you can talk Gus into the sheep.
    Wish I could have some of those prawns. I'm the only seafood eater here so I really miss it.
