Special Fried Rice ...

This is my recipe for Special Fried Rice
~
SPECIAL FRIED RICE
1 small chicken breast, poached in small amount of water, soy sauce and fresh ginger until tender
2 rashers of bacon
10-12 raw prawns, cut into small pieces
2 cloves garlic, crushed
1 tablespoon fresh ginger, grated
1/2 cup red capsicum, diced small
1 carrot, diced small or julienned
10 snow peas, sliced thinly
6 spring onions, sliced thinly
big handful of your favourite mushrooms
1 small can of corn kernels, drained
1 teaspoon chicken stock powder
about 2 tablespoons soy sauce
about 2 tablespoons sweet chilli sauce
a squeeze of lemon or lime juice to finish (if you like)

First prepare 1.5 cups of long grain rice (I use the absorption method which takes about 20 minutes) and make sure it is nice and dry. I spread mine out on a paper lined tray to air dry a bit...

Next - 1 beaten egg - heat a little oil in the wok or fry pan and quickly cook the egg as an omelette, it should only take about 30 seconds on each side. Remove from pan and slice into strips. Set aside.

Heat a little more oil in the wok, toss in the bacon and prawns and stir fry off. Add in garlic and ginger, stirring constantly. Add in other veggies, one at a time... At this stage you might need 1/4 cup water to steam the vegetables a bit. Stir gently.

Add in the chicken (sliced in small pieces, drained) and the rice and combine well. Add in the soy sauce, sweet chilli sauce and the stock powder. Mix well. Taste it to see if it needs more of the sauces, salt and pepper. Finally, gently incorporate the egg omelette.

Serve immediately and enjoy this healthy dish. You can add any of your favourite vegetables like broccoli, peas, water chestnuts. I would have had bean shoots in there but all the stores were out.
