Italian Ricotta Dumplings ...

This recipe is from Episdode 1 of Two Greedy Italians (SBS, Thursday 8.30pm) - I just had to give it a go - it seemed the perfect Sunday lunch!

In a pot, add a good slurp of good olive oil, 1 chopped chilli (I only had a green one) and 3 cloves of garlic, finely sliced...

Once they have softened, add in 2 tins of good Italian tomatoes, salt & pepper and I also added a tablespoon of sugar...
~
Add in a good handful of chopped, fresh basil...
~
For the dumplings... in a bowl, mix 220gms of Ricotta cheese and 3 egg yolks...
~
Add a sprinkle of nutmeg, salt and pepper...
~
Next, add in 200gms of flour (I used OO Italian flour which is used for pasta making but plain flour would do) ... Once roughly combined, turn it out and give it a gentle kneading until a smooth dough forms...

Now cut off sections and roll into long sausages ... dust with flour then cut off small amounts...
~
It doesn't really matter if they are different sizes, that's the rustic charm of them...
~
The dumplings (or gnocco) ready to go into the gently boiling water...
~
In they go for about 4 minutes... they sink to the bottom then when they are ready they pop to the surface...
~
Toss them into the sauce, stir through then serve...
~
Top with a little parmesan cheese... this is a totally 'from scratch' meal with no nasties in it! It must be good for you!

Best eaten outside on a sunny autumn day with a good wine... (and fresh bread rolls!).
