New take on an old favourite....

Chocol-oat Cookies
(think Chocolate Anzac Biscuits)

1/2 cup (75g) plain flour
75g rolled oats
35g good quality cocoa powder
1/2 tspn bicarb soda
100g unsalted butter, softened
50g caster sugar
75g light brown sugar
1 tspn vanilla extract
1 egg
125g milk or dark or white (or all!) choc chips

Preheat the oven to 180C. Line 2-3 baking trays with baking paper.
Combine flour, oats, cocoa and carb soda in a bowl. Set aside.
Meanwhile, beat butter, caster sugar and brown sugar together with electric beaters until the mixture is thick and pale (this gives you the lovely crunch).
Beat in the vanilla, followed by the egg. Now using a wooden spoon, mix in the dry flour mixture. When it is all mixed in, fold in the choc chips.
Pinch out large spoonfuls of batter (size of a ping pong ball) and roughly roll/form into balls. Flatten slightly and space them evenly apart (allow for spreading).
Bake for 15-20 minutes.
When the cookies are done, they will have spread into big, squidgy discs. They will feel soft but will harden a little as they cool.
Remove from trays onto cake rack to cool using a spatula.

These are so crunchy and chocolatey and wicked! I intend to give half the batch to Gus to take to Kirby today, leave a few for Brianna then take the rest to work so they are out of my sight! I have had one!

The blue and white plate is the last dinner plate I have from my first dinner set. I have one side plate left also.
