Friday catch up...

I made these berry swirl (I added choc chip) muffins this morning. We had some visitors come for morning tea. These are Betty Crocker packet muffins - very easy and very yummy.

...and Lady Antebellum. Love this music. I came across them on someone's blog (can't remember who) and then I actually bought their CD. I've been listening to it since about February. I said to Bri how I thought it was only a matter of time before they broke into the Australian charts and I just heard one of their songs played on the radio yesterday. It was funny to hear the DJ announce them as a new group when I've been singin' their songs for months.

I also made a big banana cake this week, smothered in chocolate icing. I had 2 bananas that had gone brown and over-ripe. They make perfect banana cake. I was a nice boss and took a big plate of cake into our workers.

BANANA CAKE
*these ingredients must be added in this order*
Cream 125gms softened butter with 1 cup of sugar, add 2 ripe, mashed bananas then 1/2 cup of milk with 1 tspn carb soda dissolved in milk. Add 2 eggs, well beaten then 1 3/4 cup SR flour and a pinch of salt. Mix gently until combined. Turn into a lined, greased cake tin and bake for 45 mins to 1 hour in moderate oven (180C). Test with skewer to see if cooked. If it comes out clean its done. Ice with chocolate or cream cheese icing.
~This is my crazy cat, Bonnie. This is what she does when she 'wants in' and feeding. She rumbles on the screen until I let her in, get some food then let her 'out' again. She is an outdoors moggie.
Added - to answer some questions : Our screen is an Amplimesh security screen which is made from strong metal and fortunately cannot be destroyed by my cat.

The clouds or closing in and I think we are in for some good rain over the weekend. Fingers crossed we get through netball tomorrow morning then it can rain all it wants. Have a nice weekend, won't you?

  1. Look at that cat! Mine get babied. When I'm feeling generous, I walk them outside in my arms so they can look around and smell things. I won't put them down because they won't come back.

  2. Ah, yes, there's nothing like banana bread. Yours with chocolate icing looks like breakfast (it's that time here) to me!

  4. This is the exact same recipe for Banana Cake that I use & I can vouch for it too. It's a good one. I prefer the cream cheese icing though. Does your cat damage your screens doing that. Our old cat used to that and he would rip them to shreds. Nothing I could ever do about it though as I just loved him to bits!!

  6. That cake looks delish!!! Hope it's not raining at netball. We have bball on Friday nights for our daughter. Fortunately it's inside, but it gets really cold in those tin sheds! We were freezing last night!

  7. The muffins and banana cake look yummy and I bet the workers worked well the other day:0)
    Love Colbie Caillet but have not heard of the others will have to listen to them.
    We have had rain for the last few weeks and have now had enough so I will send it your way but not till after netball,lol.
    Lucky you have the good screens or you would be replacing them quite often our old cat used to climb up the screens like that.
