ANZACS and Zucchini Pickles...

I made a batch of Anzac biscuits yesterday (this is an old pic) and they are so yummy with a cuppa.

I found a recipe for Zucchini Pickles on Indira Naidoo's Saucy Onion blog here so I thought I'd give it a whirl... She has a lovely blog about her Edible Balcony.

Zucchini, capsicum and onion soaking in salt for 3 hours...

...my lovely Big Dutch Blue (on her maiden voyage - I got her for Christmas and this is the first time I've used her - I'm doing Lamb Shanks later this week for sure!) ...

The finished article - lovely colour and consistency but I must confess I think I stuffed up with the salt in this recipe - somehow along the way I put it in twice so it's salty. I'll let it sit for a day or two then try some. If it is still really salty I'll ditch it and try again because the recipe is a "good 'un" otherwise. Silly me!

Kirby is fully recovered from the wisdon tooth episode. She was still having some jaw pain late last week(aching up near her ears) so I booked her in for some Bowen Therapy where the lady gently massaged the muscles in her jaw which creates a release. She is finally off all pain relief so that's a blessing. My advice to anyone having wisdom teeth out - be aware of your pain medication - just because it is prescribed to you doesn't mean you have to take it. It may not suit you and may be worse than the pain iteself. If it doesn't feel like it's doing the job, either ask your doctor or a pharmacist for advice on alternative medication. Kirby was prescribed a strong pain medication, Endone, but I really think it did more harm than good. I think she could have got by with something like Panadeine/Panadol and Ibuprofen (Nurofen) with better results. Anyhoo, it's all over now and she's back ready to hit the books again for another term.

  1. It's very easy to get too much salt in pickles. For myself, I tend to forget when they've already been salted to draw off xs moisture or bitterness, as with courgettes.

    Glad Kirby's wisdom teeth are sorted now. At least that's the last time she will have bother with them.

    Oh for Gawd's sake, it's never going to rain again surely?

  2. Oh, how yummy! The biscuits/cookies look exceptionally tempting. :)))) Very good advice about medications, too; often the solution is worse than the problem.

  4. Just learned about Anzac yesterday. Saucey Chef's Australian hubby brought some over last eve. which he made. They were super delicious.

  5. Those pickles lokk so nice and the colours are amazing. I think I will have a go at that recipe.
    Glad Kirbys mouth is all better and she can get back normal.

    Medication is not always the right type for everyone and I agree with you.

  6. Amen to not having to take all the meds they prescribe for you! So glad Kirby is up and doing better. I believe in ANYthing homeopathic before the chemicals (though I'm glad for them if really needed).

    And may I say, I'm SO envious of that BIG OLD LE CRUESET stock pot! You MUST be loved, girl. I have ONE piece - a skillet - and I'm hoping for one of those big boys one of these days.

    And yes, Kate came all the way here just to see me! lol

  7. My most favorite pickle is 'bread and butter' but these look so delicious I will have to give them a try! We will have a boat load of zucchini in a month or so!

  8. You are so right about the pain medication. I am very sensitive to medications and prefer the simple Tylenol or Ibupropen.
    Those pickles look amazing! Have you ever had Lime pickles? My late mother-in-law made them (they have a little cloves and spices in them and are sweet) They are also bright green and crisp. Glad to hear your daughter's better! Hope all is well with you. V.
