Day 9 of the Throw Down...

I walked for about 1/2 an hour this morning as KP had to start work early. I pounded up and down our main street, stopping to window shop every now and then...nice shoes and bags in there...nice shirt on half price rack there...ooh, I like that lamp in there...and so it went on.

Day 9 - Breakfast - 2 slices Burgen Soy-lin toast topped with slice of ham and 2 eggs, scrambled with parsley and curry powder. I have farm fresh eggs at the moment and probably shouldn't have them two days running, but they are so good.
Cup of coffee and glass of fresh squeezed orange juice - note to self - try adding a mandarin or two to the mix. Glass of water.

Lunch - pictured above - 180 gm can tuna in springwater, drained. Small potato, zapped in mocrowave until tender, lettuce, 4 cherry tomatoes, red onion, grated carrot, celery, sprinkle of lowfat cheese, dollop of lowfat sour cream for spud and drizzle of balsalmin oil free dressing.
Pile it all into a plate like I have and enjoy. It is really filling and very satisfying. Banana and a tub of yoghurt to follow later.

Snacks - 4 cruskits with vegemite, 8 prunes

STICKY PORK CHOPS
1/3 cup plum sauce (SPC brand, in jar)
2 tspns sweet chilli sauce
1 tblspn soy sauce
2 tblspns honey
1/2 tspn crushed garlic
1/2 tspn crushed ginger

1 tblspn olive oil
lean mid loin pork chops

I mixed the sauce ingredients in a small bowl and set aside. Simply cook the pork chops to your liking in a fry pay until cooked and tender. Add the plum sauce mix and let it bubble and thicken slightly, coating the chops.

CAULIFLOWER AU GRATIN
1/2 a small cauliflower (600 gms)
1.5 cups skim milk
1 tblspn butter
2 tblspn plain flour
1/3 cup reduced fat tasty grated cheese
salt and pepper to taste

Cut cauliflower into small florets and place in a small baking dish. Cover and microwave for 2
minutes. Melt butter in a small saucepan, add flour and mix together, cook off for one minute. Gradually add in the milk (use a whisk to avoid lumps) until white sauce thickens. Add half of the cheese to the sauce and season to taste. Remove from heat and let stand 5 minutes to thicken. Pour over steamed cauliflower and top with remaining cheese. Place in 180C oven for approx. 20 minutes until bubbling and top has browned. Serve immediately.

Dinner - Serve the chops with mashed potato, carrots, peas and corn and cauliflower au gratin. Another low fat but comforting dish for a cold night.
