A Bucket - O - Biscuits...

SCHOOL COOKIES

1 cup SR flour
3/4 cup coconut
1/2 cup mixed fruit
1/4 cup glace red cherries, chopped in 1/4s
3/4 cup cornflakes
3/4 cups sugar
1/2 tspn bicarb soda

125gms butter, melted
1 big tblspn golden syrup
1 tspn vanilla essence/extract
1 egg*
Mix all dry ingredients together. Melt butter then add syrup, vanilla and combine. Pour into dry mix and add egg. Mix all together. Place spoonfuls onto a baking paper lined tray. Bake for approx. 15 minutes until golden at 180C.

* This is the bucket-o-biscuits I made for my friend, Kathy. She and her husband Richard, have headed off for a 6 week camping adventure to Cape York, Queensland. I thought they needed something to have with their cuppa on the side of the road, each day or by the campfire at night.

  1. I love home-made bikkies! Haven't made any for ages because I would just HAVE to eat - well - one, shall we say, and that would lead me into terrible temptation and, as Oscar Wild said, "I can resist anything but temptatio"!!

    Of course, I would have to stretch a point if someone made them for me.

  2. Oh Yum! They all look delicious!

    We're making biscuits today (with the daycare kids) and I have to admit that I'm simply dreading it!

    But... they'll have fun making them... and I guess that's all that counts, isn't it?

    (off to find my Panadol now. I think I'm gonna need it!)
